Choosing your broth and what comes with the shabu kalguksu set

You can pick between a spicy red broth or a clean, mild white broth depending on your taste. The base set is generous: fresh vegetables and mushrooms, beef shabu, plus house-made kalguksu noodles and a finishing fried rice.

The beef is a selection of US Choice-grade chuck flap and Australian S-grade cuts, with no gamey smell, and you can add extra sirloin, dumplings, mushrooms, or vegetable sides depending on your taste for an even more filling meal.

What does the white broth (regular spice) taste like?

There's a guide on how to enjoy it best — basically, put all the meat in and let it simmer.

The white broth is clean and refreshing, not overpowering. It's called regular spice but has a slight kick, which makes it even tastier.

No dominant MSG taste, so I kept spooning it up without ever getting sick of it.

Maybe because they only use freshly butchered meat that's carefully managed, the beef was tasty and tender. Dipped briefly in the broth to cook, there was no gamey smell at all, and the more I chewed, the more the savory juices came out. Tender with no toughness, it paired well with minari (water dropwort) and mushrooms too. You can tell this place really cares about meat quality.

House-made kalguksu noodles, then crispy fried rice to finish

After clearing out the meat and vegetables, it's noodle time with the house-made kalguksu. The noodles are chewy and delicious!! They didn't fall apart easily even in the boiling broth, staying chewy yet soft all the way to the last bite. The broth soaked well into the noodles, and topped with a piece of that fresh handmade kimchi, it was a perfect match.

Time for a spoonful of broth and the fried rice. Just fry it until it crisps up nicely on the bottom of the pot. The rice that browns like a crust on the bottom is so good that even full, I kept eating.
