Boulangerie Tan is a European-style naturally fermented baguette and sandwich bakery brand that started in Paju and built a big following there. The signage at the KINTEX branch clearly states the brand's production principles: made today, sold today, discarded today — strict same-day quality control, they say.

They use a self-cultivated natural sourdough starter (levain) and knead their dough with organic wheat and French wheat. No chemical additives — only natural butter and dairy cream, apparently.
